About the Breed

  • Origin: Akaushi (pronounced Ah-kah-oo-she) is also known as Japanese Red Wagyu. Originating in the Kumamoto Prefect of Japan, the breed was imported from Japan in the 1990s and has been carefully bred in the U.S. since then.
  • Unique Traits: Compared to the more common Black Wagyu, Akaushi is prized for its balance of marbling, tenderness, and a slightly leaner profile.
  • Why It Matters: These genetics create beef that’s both indulgent and surprisingly heart-friendly.

On our fifth-generation family farm in Mount Horeb, Wisconsin, we raise Akaushi Cross Wagyu cattle on pasture with care and respect. Is Akaushi the same as Wagyu?
Yes—Akaushi is one of the four original Wagyu breeds from Japan. All Akaushi are Wagyu, but not all Wagyu are Akaushi.

How is it different from Angus?
Angus beef is hearty but leaner, while Akaushi offers higher marbling, richer flavor, and more tenderness.  

Do you verify your Akaushi genetics?
Yes. At Generations Beef we genetically test all of our animals to ensure they are a minimum of 50% Akaushi Wagyu. This gives you the confidence that when we say Akaushi, it truly reflects the breed’s superior genetics. Unlike Angus, where no genetic testing is required to be labeled as Angus,  our commitment guarantees authenticity and quality in every cut.
