Before You Cook

A few fundamentals make all the difference.

Thawing

  • Thaw slowly in the refrigerator whenever possible

  • For faster thawing, keep the beef sealed and submerge in cold water

  • Avoid microwaving premium cuts

Seasoning

  • Start simple. High-quality beef needs very little

  • Salt generously 40–60 minutes before cooking

  • Add pepper or herbs just before or after cooking to avoid burning

Temperature

  • Let beef rest at room temperature for 30–45 minutes before cooking

  • Cook to internal temperature, not time

  • Always rest beef after cooking to lock in juices


Cut-Specific Cooking Guides

Steaks (Ribeye, Strip, Tenderloin)

Best methods:

Storage & Refreezing

  • Beef that arrives cold to the touch may be safely refrozen

  • Store vacuum-sealed cuts in the freezer for long-term quality

  • Once opened, use refrigerated beef within 3–5 days
